No Bake Chocolate Coconut Energy Bars

These are super tasty and a NO-Bake item. Simply mix all ingredients in a mixing bowl well, spread out into a flat sheet pan, sprinkle coconut on top and cut into 1 inch pieces. Keep in fridge. Dip in white or brown melted chocolate or drizzle chocolate on the top. Enjoy.

Ingredients

  • 2 cups x Oatmeal (uncooked)

  • 2 tsb x Vanilla

  • 2 tbsp x Candied peel (dried cut cherries)

  • 3 tbsp x Peanut Butter (smooth or crunchy)

  • 2 tbsp x Cocoa powder

  • Sprinkle shredded Coconut

  • Melted white or brown Chocolate

Directions

  • Measure all ingredients
  • Mix all ingredients into a mixing bowl well
  • Spread mixture onto a flat cookie sheet pan, with a sprinkle of coconut on pan first
  • Press the mixture hard into a rectangular square
  • Sprinkle coconut on top. If you like melt chocolate and dip ends in or drizzle over top
  • Cut in 1 inch squares - Keep in fridge & Enjoy
