Ingredients
1 - Banana
1/2 cup - fat free cottage cheese OR Oskios No-Sugar Greek Yogurt
1 tsp - Vanilla extract
1/4 tsp - Salt
1 large - Egg
1/4 cup - Peanut Butter (chunky or smooth)
1 cup - Uncooked old-fashioned rolled oats
handful - milk chocolate chips
Directions
- Preheat the oven to 350°F. Spray PAM Spray on a cookie sheet, or line the cookie sheet with parchment paper.
- In a medium bowl, mash the banana with a fork until almost smooth. Add the cottage cheese or yogurt and mash to a smooth consistency. Whisk in the vanilla, salt, and egg until smooth. Whisk in the peanut butter until well combined. Stir in the oats and chocolate chips.
- Drop the dough by ¼ spoonfuls onto the prepared pan. Bake until the cookies are set and lightly browned, 15 to 18 minutes.
- Enjoy a warm cookie fresh out of the oven.
